When it’s freezing outside, you’ve been working late on weekend ‘projects’ and you still have the last of the beautiful summer veg… it’s frittata time! This easy dinner had some beautiful purple Congo potatoes, eggplant, zucchini, onion, homegrown capsicum and basil, pork and fennel sausages, free range eggs and some lovely fresh pecorino from Griffith! Paired with a rocket, pear and balsamic salad and vino from @debeaurepairewines this last minute dash towards dinner was actually perfect!

Our food van is nearly ready to go and we will be baking up a storm! All our breads are hand made using 100% our own wheat, stone milled onsite fresh for each bake!

Who’d like fresh sourdough, focaccia, and pastries delivered to their town? If your little town is missing a bakery and you are located within 100kms of #nyngan shout out below and we’ll try to schedule in a visit!!

Rob and Jayda from the Dubbo Field Naturalists knew all the secret hiding spots of our feathered friends! The weekend saw over 61 bird species identified and a lot of wildlife in between! Stay tuned as we build our list online and provide updates!
