We call it “Grit meets Glamour.” Callubri is a broadacre, large-scale Merino sheep and wheat station, not a hobby farm. You will see the red dust, the massive headers during harvest, and the hard work that goes into regenerative agriculture. However, your “base camp” is a sophisticated, luxury lodge-style stay featuring elegant interiors, climate-controlled comfort, and a 12-metre mineral pool. We’ve bridged the gap between the raw, untouched outback agritourism experience and refined, high-end hospitality, so you can witness the rigours of station life during the day and retreat to polished luxury by night.

Is the ‘Paddock-to-Plate’ dining experience truly from your own land?

Absolutely. Because we are owner-operated, Angie and her team manage the kitchen gardens and products from the paddocks. Our “rustic fine dining” menus are designed around the seasons and what is being produced on the station at that very moment. From our own stone-milled wheat used in artisan sour dough breads to our grass-fed Merino lamb and sun-ripened heritage vegetables, every plate tells a story of the soil you’ve walked on that afternoon. It is an authentic culinary journey that celebrates the flavours of Outback Australia.

How accessible is such a remote ‘Outback’ experience for short stays?

While we feel worlds away, we are actually the most accessible outback station stay to Sydney. We’ve designed our experience for the modern traveller who values their time. By utilizing private air travel, you can swap the city skyline for the outback horizon in just over an hour. This means a “weekend city escape” to the deep outback is not only possible but effortless, allowing you to spend more time immersing yourself in nature and less time behind the wheel.
