Tri-Colored Quinoa Salad

Are you looking for something light and healthy that will keep you full of energy? This quinoa salad recipe made with delicious Australian grown Quinoa, is a hearty, healthy meal either on it’s own or topped with your favorite protein like grilled chicken. Quinoa is so easy to prepare and is a wonderful option for mid-week meal prep lunch or a dinner side dish.

Ingredients

  • 1 ½ cups Quinoa
  • 1 ¾ cups water
  • 1 cup handful quartered cherry tomatoes
  • 1 cup of salad greens, we like to use rocket
  • 1 cup diced cucumbers, seeds removed optional
  • 1 Avocado, peeled and diced
  • 1 cup torn basil & mint
  • ¾ cup crumbled feta cheese
  • ½  cup olives, pip removed, torn into pieces
  • ½ cup diced Spanish onion, soaked in water and drained
  • ⅓ cup toasted pine nuts
  • 2 tbl Green Citrus Dressing
  • Salt and cracked pepper to season

Method

(Note: If you bought our Meals in Minutes jar, please adjust this recipe by half and add the flavour sachet when cooking the quinoa!)

  • Put the Quinoa into a strainer and rinse thoroughly.
  • Combine the quinoa and water in a medium sized saucepan and bring to a gentle boil, reduce the heat to low, cover with a lid and simmer for 15 minutes.
  • Remove from the heat and leave to sit with the lid on for 10 minutes.
  • Fluff the cooked Quinoa with a fork.
  • Combine the cooked quinoa, tomato, rocket, cucumber, herbs, onion, olives and dressing then toss to combine. Top with an extra drizzle of dressing, feta and pine nuts. Enjoy!
